<h3 class="wp-block-heading">Spices</h3>



<p>Basic ingredient to any good masala chai is a fragrant spice mix. While there are many delicious pre-made chai blends, nothing is better than <a href="https://allthattea.com/homemade-masala-chai-recipe/">making your own mix from a scratch</a>.</p>



<p>This recipe is made with cloves, cardamom, mace blade and cinnamon. All of them, except mace blade, are quite common in making masala tea. Mace blades are outer layers of nutmeg and they are super fragrant. Always use fresh spices and crush them using pestle and mortar.</p>

<p>Whenever you are making milky tea, you want to use full fat or even full cream milk that will be able to hold all those flavours together and still offer a rich and full texture. Using whole milk is a must.</p>

<p>Proper chai requires a proper <a href="https://allthattea.com/tag/black-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with black tea">black tea</a>. The most common tea to use is strong broken Assam tea or CTC Asaam tea. CTC and broken leaves will infuse into a much bolder and stronger tea. Tea doesn&#8217;t need to be expensive. In fact, chai is rarely made with super high-quality tea. However, it has to be fragrant. Use tea leaves that are fresh because it will have a tremendous impact on the flavour. </p>

<p>You&#8217;ll need lots of ice. Although there are many ways of making slushies at home, this is by far the easiest one. It may not be a classic recipe as it doesn&#8217;t require any special steps or freezing. However, most importantly, it has a slushie texture. </p>

<p>This tea has only a few ingredients, and all of them contribute to the flavour. Perhaps, the most interesting one is white hibiscus, not as common in tea as its red counterpart. Hibiscus is an amazing ingredient that gives a perfect amount of tartness and is not as sour as lemon. <p>Lemon Curd is a loose tea in pyramid tea bags. That means it&#8217;s easier to brew than loose tea but offers a better flavour than a classic tea bag. Bring fresh water to a boil and let it cool down to 80 degrees Celsius. Steep one tea bag in 150-200 of water for 3 minutes. </p>

<h2 class="wp-block-heading">What&#8217;s in Basilur Raspberry Infusion?</h2>



<p>Fruit teas are infusions made with dried fruit pieces and often some other herbal ingredients. They don&#8217;t contain any Camellia sinensis tea leaves, so they are technically not teas, but infusions. Some fruit teas are made only with fruit pieces, and many contain other herbal ingredients, too.</p>



<p>Basilur Raspberry Infusion contains hibiscus flower, orange peel, apple, stevia leaves, natural raspberry flavour and citric flavour. It comes in a classic, individually wrapped tea bags.</p>



<p>It smells sweet and deep, with a light, dusty note. Since hibiscus is the key ingredient, it&#8217;s also a dominant scent. Most fruity blends are made from one main ingredient, usually hibiscus or apple, secondary ingredients and flavourings. Although not a fruit, hibiscus is great for adding a deep crimson colour and unique deep and tart flavour. Another interesting ingredient in this tea is stevia, a natural sweetener with a distinctive sweet flavour and no calories. The first thought? This tea would be great for making iced or cold-brew tea.</p>

<h2 class="wp-block-heading">What does it taste like?</h2>



<p>To make a cup of fruit tea, use freshly boiled water and steep it for 5-10 minutes. Fruit teas will rarely get bitter, unless they contain lots of orange peel. This is mostly true for loose blends, rather than classic tea bags.</p>



<p>Once brewed, hibiscus gives it a pretty deep crimson colour. This tea smells like a rich hibiscus tea, with key notes of regular fruity teas that contain tart hibiscus. However, raspberry comes as an under flavour and really comes into a focus as an aftertaste. Raspberry scent is also pronounced, accompanied by an intense sweet note.</p>



<p>Basilur&#8217;s Raspberry infusion is a flavourful, strong and deep tea. It&#8217;s quite sweet but not sugary sweet. You can definitely feel that the sweetness is coming from an herbal ingredient rather than refined sugar. It has a light zesty note from hibiscus, and a light raspberry aftertaste. Raspberry is not an actual ingredient in this tea (which is often a case with raspberry flavoured teas, and the flavour is added with natural raspberry flavouring). This tea doesn&#8217;t need any sweeteners as it already contains stevia leaves. However, if you prefer very sweet teas, both honey and white sugar are a good choice.</p>

<p>Coconut matcha pre-mix is a matcha tea with natural coconut flavouring and cane sugar. In fact, it contains a lot of sugar – 75% of this pre-mix is cane sugar, and 25% is organic Japanese matcha. <p>This blend contains caffeine too. However, the caffeine content of 1 teaspoon of this blend will b lower than a caffeine content of 1 teaspoon of pure matcha powder. Therefore, it may be a good choice if you want to reduce the caffeine intake.</p>



<p>Coconut matcha pre-mix smells super nice. There are a lot of green matcha notes coming through an intense creamy coconut scent and it smells very sweet. So, what&#8217;s good about pre-mix blends? They differ slightly from regular matcha powder, as you can use them straight from the pouch, with no need for sifting or extensive whisking. Plus, they usually already contain a sweetener.</p>

<h2 class="wp-block-heading">How to make this tea?</h2>



<p>The best way to make this tea is using hot water to dissolve it, then topping it up with cold water and serving with ice. This, however, doesn&#8217;t mean you can&#8217;t drink it hot. But when made with hot water, it will be a VERY sweet drink. For some tea drinkers, this may be just too much sweetness. &nbsp;</p>



<p>This matcha is not suitable for whisking because of a high sugar content, so it&#8217;s better to use an electric frother instead or simply shake it in a water bottle.</p>



<p>To make a cup of coconut matcha, use ½-1 teaspoon of powder and mix it with hot water at 80 degrees Celsius. To make matcha <a href="https://allthattea.com/tag/milk-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with milk tea">milk tea</a>, use ½-1 teaspoon of tea powder, add 50-70 ml water and top up with cold milk or steamed and frothed milk.</p>



<p>We tried both and the best way is by far to drink it with milk:</p>

<p>Milk will reduce sweetness significantly, and it will feel like a completely different tea, leaving only coconut and matcha to dominate the blend.</p>



<p>It&#8217;s one of those teas you need to treat as a dessert, especially if you are using 2 rather than 1 teaspoon of pre-mix. Because the sugar content is so high, it may not be a suitable replacement for a pure matcha powder, especially if you love the pure unsweetened flavour of matcha.</p>

<p>Who may like this tea? If you prefer very sweet drinks, this is a tea for you. However, it&#8217;s not suitable for tea drinkers that want to drink matcha traditionally. It&#8217;s great for making lattes or iced milk teas. As a dessert blend served with milk and/or ice, it tastes delicious. It&#8217;s perfect for <a href="https://allthattea.com/tag/spring/" class="st_tag internal_tag " rel="tag" title="Posts tagged with spring">spring</a> and summer garden tea parties, or even as an after-gym drink.</p>

<h2 class="wp-block-heading">What&#8217;s in Peach Mango Cold Brew Tea?</h2>



<p>Cold brew teas are blended specifically made for brewing with cold water rather than hot. Although you can use hot water and then simply add ice, they are crafted to give enough flavour even in cold or lukewarm water.</p>



<p>Teapigs has a whole range of cold brew blends, all caffeine free. Cold brewing was first popular with green and black teas, and for a good reason. Fruit blends and many tisanes will usually release less flavour than green or black teas. <a href="https://allthattea.com/tag/green-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with green tea">Green tea</a> is usually the fastest to cold brew, while fruity ingredients will take the longest.</p>



<p>Peach Mango Cold Brew tea from Teapigs contains white hibiscus, apple, sweet blackberry leaves, chicory root, citric acid, beetroot and natural peach and mango flavourings. Box contains 10 tea bags (or tea temples, as Teapigs calls them). It smells super intense, sweet, with fruity peach and mango notes.</p>

<h2 class="wp-block-heading">How to make Peach and Mango Cold Brew tea?</h2>



<p>So how to make a proper cold brew tea? Even though the instructions suggest using up to 500 ml of water and steeping in cold water for only 7 minutes, this method may not offer enough flavour for all tea drinkers. As mentioned earlier, fruit blends are unlikely to brew into a strong cup of tea if you use cold water. This is true for specially crafted blends too. Therefore, this tea is better steeped in 200-400ml of warm water, and then topped with ice. This method too, will give a flavour lighter than regularly brewed tea, but it will be slightly more intense. Keep that in mind if you prefer stronger flavours.</p>



<p>Once brewed, the scent is all about peaches. Flavour is light though, so if you like lighter flavour, you&#8217;ll like this tea too. It has a light zesty note, a light mango note and a dominant peach note. It leaves a sweet fruity aftertaste. Peach Magno Cold Brew tea is very easy to drink and very easy to make. It doesn&#8217;t need any sweeteners, and adding some would only overpower the flavour.</p>

<p>What makes is so good is the intensity of flavours, perfect sweetness and lots of ice. Iced teas are typically sweetened, although you can drink them pure if they are not bitter. To get the best intensity, you need to find the best tea to water ratio.</p>

<p>Yes, it&#8217;s always best to make an iced tea by steeping tea leaves in boiled water first. If you don&#8217;t have too much ice, you can steep the tea beforehand and let it cool in the fridge. This is not the same as cold brewing.</p>

<p>Cold brewing is a different method of preparing tea. Instead of using hot water, cold brewed teas are slowly steeped in cold water over several hours in the fridge. You don&#8217;t need any ice for cold brewing, or a kettle. Cold brewing will significantly change the flavour profile and nutrient content of brewed tea. Iced tea will have the same flavour profile as regularly brewed tea, except it tends to be stronger.</p>

<h2 class="wp-block-heading">Tips for making the best iced tea</h2>



<p>Making an iced tea at home is easy, but it&#8217;s not always straightforward. This is especially true if you are used to drinking pre-made teas. Pre-made iced teas may not always contain tea leaves and may also contain lots of sugar and fruit flavourings. All this will impact the flavour that won&#8217;t be easy to replicate at home. However, that&#8217;s perfectly ok, as you can make delicious, super flavourful drinks at home using ingredients you already have in your pantry.  </p>



<p>So, how to make the best tasting iced tea?</p>



<p>Here are the 9 simple tips.</p>

<h3 class="wp-block-heading">1. Choose the right tea</h3>



<p>You can use almost any tea you want. However, just like when making a cup of hot tea, if you want to get the best flavour, you have to have the best tea. Best tea doesn&#8217;t mean the most expensive tea, but it should be fresh and flavourful.</p>



<p>What tea is best for iced tea? Traditionally, this type of tea has been made with mostly tea bags. Tea bags are a good option if you want to add sugar or honey and prefer an intense flavour. Some traditional tea bags may give a murky and bitter tea. Test it out before. If it tastes good without a sweetener, it will be great for making an iced tea too.</p>



<p>Loose tea leaves, especially pure, will often have less bitterness, and a more complex flavour. Flavoured teas are an amazing choice as well.</p>



<p>But if you want to use pure teas, you can add flavour with:</p>

<h3 class="wp-block-heading">2. Make a strong infusion</h3>



<p>To make the best cup of iced tea, use more leaves than normally. Adding only 50% more will intensify the flavour significantly. 1 ½ or 2 teaspoons of tea leaves per serving will give much more flavour than brewing it for 10 minutes. Over brewing may also increase the bitterness, while adding more tea leaves will intensify the flavour. Furthermore, as the ice melts, tea will become diluted. That&#8217;s why it&#8217;s always a good idea to add more tea leaves.</p>



<p>So what is the ratio of tea to water for iced tea?</p>



<p>If you are using:</p>



<ul class="wp-block-list">
<li>loose tea, use 1 ½ &#8211; 2 teaspoons of tea leaves per serving.</li>



<li>traditional tea bags, use 1 or 2 tea bags, depending on their strength. Most tea bags will contain dust and fannings that will infuse into a strong tea, so one will be enough.</li>



<li>pyramid tea bags with loose tea, you may need to add two, rather than one, depending on how many tea leaves they contain.</li>
</ul>



<p>Use 120-150 ml of water for steeping the tea, then top up with fresh cold water later.</p>

<h3 class="wp-block-heading">3. Don&#8217;t over brew it</h3>



<p>Never over brew your tea when making an iced tea. Sure, both sugar and ice will reduce the bitterness, but ideally, you want a flavour that will taste good even without adding sweeteners. How long do you steep tea for iced tea? You can steep the tea leaves a minute or two longer than usual, but not more. This means, 4-6 minutes for black teas, and 3-5 minutes for green teas, 3-5 minutes for oolong teas and 5-10 minutes for herbal teas.</p>

<p>If you want to make iced tea that will taste similar to drinks from supermarkets or restaurants, then you will need to add a sweetener.</p>



<p>White or brown sugar and floral honey are all great for sweetening iced tea. Always add sugar or honey before adding ice, so it can dissolve better. For making a calorie-free drink, you can use stevia or sugar alternatives. Iced teas are usually always sweetened.</p>

<p>Adding freshly squeezed lemon juice to green or black tea will always elevate the flavour. Lemon goes well with many tea types, but don&#8217;t add it to chocolate or nut flavoured teas. Other great citruses to add are oranges and limes.</p>

<p>For a super fruity flavour, you can add washed and chopped fruit pieces, and steep them together with black or green tea for 5 minutes. Once ready, pour it into a glass, add sweetener and ice. Fresh fruits will make your black tea brighter and super flavourful, regardless of if you are using loose tea or tea bags.</p>

<h3 class="wp-block-heading">8. Choose special iced tea blends</h3>



<p>Many brands are offering special tea blends crafted specifically for making iced teas. These blends will have lots of flavour and usually smaller tea leaves. Although you can use any tea blend you want, special tea blends will usually always offer a desired strength and flavour. You can also use pre-made cold brew blends and brew them with hot water.</p>

<h3 class="wp-block-heading">9. Use high-quality water</h3>



<p>Water quality will significantly impact the flavour of any tea – hot or iced. Use colourless and odourless water that&#8217;s not too flat and not too hard. Avoid distilled water. Using tap water will usually be fine, unless it&#8217;s murky and smells of chemicals. If that&#8217;s the case, bottled <a href="https://allthattea.com/tag/spring/" class="st_tag internal_tag " rel="tag" title="Posts tagged with spring">spring</a> water may be a better choice. Also, avoid re-heating the same water multiple times.</p>

<p>Tea tonic is a drink made with icy cold tonic and brewed tea. The idea originated from coffee tonic; a refreshing drink made with a shot of espresso poured over cold tonic. To get a two layered look, make sure the tonic is fresh and icy cold and always pour tea straight onto the ice.</p>



<p>Tea tonic usually contains a caffeinated tea, so make sure to use a decaf tea for a caffeine-free drink. </p>

<h2 class="wp-block-heading">Ingredients for making Tea Tonic Boba</h2>



<p><b>Tonic</b>: choose any tonic you want, as long as it&#8217;s freshly opened. Avoid using flat tonics. Alternatively, you can use a flavoured carbonated water too.  </p>



<p><b>Tea</b>: make a stronger brew using 1 heaped teaspoon of tea leaves, and steep for 3-5 minutes, depending on the tea type. If you want to extract more flavour, add more tea leaves instead of steeping them longer.</p>



<p><b>Popping boba</b>: They are usually available in smaller containers, enough for making three drinks. If you are using regular unflavoured black or green tea, choose your favourite flavour. If you are using flavoured teas, try to match the popping boba flavour with the flavour of tea. Grape flavoured pearls pair extremelly well with earl grey tea. Add popping boba before adding ice.</p>



<p><b>Ice</b>: add lots of ice into tonic before adding tea. Set aside for a couple of minutes until your tonic is icy cold. While waiting, brew the tea to save time.</p>

<h2 class="wp-block-heading">Ingredients for making Peach Tea Boba</h2>



<p><b>Fresh peach:</b> Only use ripe peaches, otherwise the peach flavour will be very mild. If you can&#8217;t get fresh ripe peaches, the best alternative are the canned ones. One larger peach will be enough to make 2 servings of the bottom peach layer. You don&#8217;t need to peel them. If you do, the colour of the syrup will be more yellow, otherwise it will be orange-red. </p>



<p><b>Sugar:</b> The best type of sugar for this recipe is white granulated sugar.</p>



<p><b><a href="https://allthattea.com/tag/black-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with black tea">Black tea</a>:</b> Although you can use any quality strong black tea, a second flush Darjeeling is one of the best teas to use for this recipe. It&#8217;s fruity and floral, rich and pairs amazingly well with peach. Second flush Darjeeling is widely available and a genuine delight to drink pure too. A good alternative is a malty and rich Assam or a regular breakfast blend. </p>



<p><b>Tapioca pearls:</b> Tapioca pearls are usually used for milk teas, while fruit bobas will often contain juicy popping pearls. This recipe is great with <a href="https://amzn.to/3qJrsbT" target="_blank" rel="noreferrer noopener">brown sugar boba pearls</a> as the peach layer is thicker than regular juice. However, feel free to replace brown sugar boba with peach <a href="https://allthattea.com/tag/popping-boba/" class="st_tag internal_tag " rel="tag" title="Posts tagged with popping boba">popping boba</a>.</p>

<h2 class="wp-block-heading">Instructions </h2>



<p><b>Make the peach layer:</b> To make the peach layer wash and cut one larger peach into thin slices. Add it into a small saucepan with 150 ml of water and 2-3 spoons of sugar and simmer for 15-20 minutes. Let it cool for 5-10 minutes, then strain it through a cheesecloth. Another way is to blend it first, then strain it. Syrup won&#8217;t be as clear, but it will have lots of flavour, with a texture closer to a peach juice with pulp. </p>



<p>You can make this layer ahead of time and store it in the fridge.</p>



<p><b>Brew the tea:</b> Bring fresh water to a boil. Measure 1 heaped teaspoon of 2nd flush Darjeeling tea leaves and steep them in 220 ml of water for 3 minutes. Choose high quality odourless water that won&#8217;t impact the flavour of the tea.</p>



<p><b>Cook tapioca pearls:</b>  Cook tapioca pearls following instructions on the packaging. Use at least 500 ml of water and bring it to a boil. Add tapioca pearls, wait until they are all floating on the surface, then cover and simmer for a few more minutes. </p>



<p><b>Assemble the drink:</b> To assemble the peach tea boba, pour ½ of the peach syrup into a serving glass. Add tapioca pearls right after straining them. You don&#8217;t need to coat them. Add ice and slowly pour brewed tea over ice.</p>

<h2 class="wp-block-heading">Steps for making Earl Grey Watermelon Popsicles</h2>



<p><b>Prepare moulds</b>: Plastic popsicle moulds are super handy for making homemade popsicles. You&#8217;ll need approximately 6-7 moulds. Most popsicle moulds will have a base that will keep them upright, but if you have individual ones, you can use plastic cups to place popsicle moulds inside. Both <a href="https://amzn.to/3KZtYkZ" target="_blank" rel="noreferrer noopener">silicone</a> and plastic moulds will work.</p>



<p><b>Cut the watermelon:</b> Cut watermelon into small pieces and remove all seeds. Place it into a blender and add 7 tablespoons of earl grey syrup. Syrup will add both sweetness and texture. Less syrup will give popsicles an icier, rather than smooth texture. Add lime juice and blend it for 30 seconds. Since the syrup is heavier than watermelon, it will sink to the bottom, creating a two layered look.  </p>



<p><b>Pour into mould and freeze:</b> Pour the watermelon and earl grey syrup into moulds. Don&#8217;t add popsicle sticks just yet. You&#8217;ll need to freeze them for about 30 minutes before inserting them. Once you add sticks, leave it to freeze for a couple of hours.</p>

<p>Once your popsicles are frozen, store them in separate wrappers to keep them fresh and flavourful. Popsicles will keep for at least a month. However, if you leave them in moulds, the flavour may change in less than a week. To remove popsicles from a mould, simply leave them outside the freezer for a couple of minutes and gently remove them.</p>

<p>Earl Grey simple syrup is a simple sugar syrup made with brewed earl grey tea and granulated sugar. It will take only 10-15 minutes to make. What&#8217;s great about making this syrup at home is that you can choose your own ingredients and adjust both texture and flavour:</p>

<p><b>Make a jelly:</b> To make a jelly, add fruits and water into a saucepan and simmer for 15 minutes. Strain after 15 minutes into a clean saucepan, to remove fruit chunks. Add sugar and simmer until it dissolves. Add agar agar and simmer for a few minutes.</p>



<p><b>Combine milk and peanut butter powder:</b> In a saucepan, combine milk and peanut butter powder and simmer while stirring. Do not let it boil. You can use a frother to improve the texture but remove the froth before pouring it into a serving glass. &nbsp;</p>



<p><b>Make the tea:</b> Bring water to a boil and steep tea for 5 minutes in boiling water. Don&#8217;t over-steep it to avoid bitterness and murkiness. If you want to achieve a layered look, do not add any sugar to tea.</p>



<p><b>Assemble the drink:</b> Start by adding a layer of jelly. Pour it while it&#8217;s still hot. Then add ice and pour milk with peanut butter powder. Add more ice if needed. Pour the tea straight onto ice.</p>
