Some teas are made to be enjoyed with all your senses. With intense, natural, sweet notes, incredible freshness and beautiful leaves, Osmanthus Baozhong oolong tea from Tea Repertoire is certainly one of them. If you haven’t tried osmanthus tea before, you are missing out on some amazing natural flavours.

What is osmanthus?

Camellia sinensis tea leaves and flowers go extremely well together. Just take a sip of a perfectly blended rose or jasmine tea, and you’ll see what a harmonious match they are. With highly aromatic, floral and fruity notes, osmanthus flowers take this bond to another level. Never heard of osmanthus flowers? You are not alone. They are common in Asia, but much less common in western countries.

Osmanthus flowers are edible flowers from Osmanthus fragrans tree originating in Asia. These small, beautiful yellow flowers are extremely fragrant and flavourful, and unlike any other flower in the world. Because of their unique sweet peach/apricot flavour, they are often used for scenting pure teas and even for making desserts. Osmanthus teas are not as common as jasmine teas, but they are equally aromatic. While jasmine teas usually have a green tea base, osmanthus flowers can be added to other types of tea too – white, oolong, green, black and dark.

© All That Tea

Base of Osmanthus Baozhong tea from Tea Repertoire is a Taiwanese Baozhong oolong tea from a biological tea farm in Nangang.

What is baozhong tea?

Baozhong tea is a unique green oolong tea from Taiwan. Taiwan is famous for its high mountain oolong teas, which makes Baozhong really stand out. It has bigger twisted leaves, and is light, floral and green, with no bitterness. This tea makes for a delicious cuppa on its own, without the need for any condiments. It’s lighter than many common green teas, with a unique flavour profile that’s perhaps the best described as a link between Taiwanese green teas and high mountain teas.

How to brew Osmanthus Baozhong tea?

The best way to enjoy any great tea is to preheat your tea ware first. In a preheated teapot, Osmanthus Baozhong is a genuine delight with sweet, deep, intense floral and apricot notes.

© All That Tea

Use about 2.5 grams of tea leaves per cup of water, and steep for 4-5 minutes at 85 degrees Celsius. You can steep oolong teas at higher temperatures than green tea, but lower than black.

Brewed tea has a bright yellow-green colour with light, fresh, sweet apricot and milky, beautifully balanced flavour. You can re-steep the same tea leaves a couple of time. If you want to use a re-steeping method, you can use more tea leaves, less water and shorter steeping time. The second infusion will offer lighter and fresher notes of Baozhong tea, with osmanthus slowly fading with each subsequent infusion.

If you are looking for a gentle, but extremely flavourful fruity and floral gentle tea with no added flavourings, Osmanthus Baozhong is a perfect tea. Natural floral notes and incredible lightness make this tea a great daily tea. But perhaps, the best way to enjoy it is when you need some time out and want to pamper yourself with delightful flavours and scents.

© All That Tea

Somewhere between chocolate, milk and tea is a delicious tea infused chocolate or chocolate enriched tea – whichever you prefer. If you are looking for a caffeine boost or added benefits and an extra dose of theobromine, this tea is a great alternative for regular hot chocolate. How to make a delicious cup of chocolate milk tea? It’s quite simple.

What is chocolate milk tea?

If you ever made hot chocolate at home, you probably know that you can make it using different techniques. Once of them is melting milk or white chocolate in milk. And that’s what chocolate milk tea is really about – adding a bit of hot chocolate taste to a regular cup of tea. Many pre-made chocolate blends contain chocolate drops for the same reason – to add creaminess and delicious chocolate flavour. That’s what this recipe is all about – to make a true chocolate in milk tea feast.

Which tea should I choose?

You can choose different types of tea for making chocolate tea, but pure teas or tea blends with a similar flavour profile will work the best.

Try it with:

English Breakfast tea

pure Assam tea

broken leaf Ceylon tea

ripe pu’erh

dark, heavily roasted oolong teas

You can also try:

Mint flavoured black teas

Orange flavoured black teas

Strawberry flavoured black teas

This recipe is made with Chinese Dian Hong tea.

Why Dian Hong?

Dian Hong tea is a Chinese black tea with a flavour profile unlike any other teas. It has natural but light maltiness and smokiness and chocolaty notes. This tea is usually drank pure, rather than with condiments. If you are looking for a tea base with natural chocolate notes rather than flavoured blends, this tea is a perfect choice. Of course, there are many Dian Hong teas out there, and each of them will have a slightly different flavour. Choose teas with beautiful leaves and lots of golden buds.

© All That Tea

Another excellent alternative for making this tea is Assam tea, which may sometimes have dark chocolate notes too.

How to make Chocolate Milk Tea?

This tea is super easy to make – you can make it within 10 minutes. Any dairy milk will work great with this recipe – even a skimmed milk as chocolate will add texture to tea. You don’t need extra sweeteners for this tea unless you are using dark chocolate.

Can you just melt chocolate in brewed tea?

Absolutely. You can make a cup of tea, strain it, add hot milk and shredded chocolate. However, either simmered or steamed and frothed milk will give a much nicer texture and flavour. This is actually great for sweetening your tea with something unique, rather than using regular sugar or honey. When making milk teas, simmering is the best method, although the best doesn’t mean you have to use it, especially if you are short on time.

© All That Tea

Tea drinking can be quite a serious endeavour. With thousands of options, hundreds of potential benefits, uncountable flavours and a very little time to try them all, enjoying every cup of your tea should be of the utmost importance. Make a cuppa and get comfortable. We are going to find answers to 6 most common tea questions tea beginners usually have.

Tea Question #1 – Am I choosing the right tea?

The most common question every tea drinker will eventually have is how to choose the right tea. There are thousands of different tea types, and thousands of tisanes to choose from, some similar, some different, but all of them unique.

What to do?

The best way to know if you are choosing the right tea is by defining why you want to drink tea in the first place. To ditch a habit of sipping sugary drinks? To improve your wellbeing? Maybe you want to practice tea meditation? Or simply to explore different flavours?

Once you know what your reason is, it will be easier to choose the right tea. The next step is to read a tea description and to ask more questions. Pure unflavoured teas will be great for tea meditations, pure unflavoured tisanes and real teas are a perfect choice if you want to enjoy the benefits, and flavoured teas and tisanes are flavourful enough to keep you away from sugary drinks. Strong blends and tea powders are great for cooking and aromatic strong teas make delicious tea syrups.

Tea Question #2 – Am I buying high-quality tea?

One of the most complicated questions to answer is how to know your tea is of the high quality. All teas should be of a high quality, regardless of their classification and type. That means, even if you are choosing broken leaf tea, it should be flavourful and stored properly. Some high-quality teas will have a lighter scent and flavour– such as Dragon Well green tea – but that doesn’t mean the quality isn’t high. Some tea contain only small leaves particles or even dust, but they should still be flavourful and tasty.

What to do?

Buy tea from dedicated and specialised tea sources. Learn more about the type you want to buy. Every cup of tea you drink should be a tasty one, cheap or expensive. Tea liquor shouldn’t be murky (unless it contains powders such as matcha tea). Learn the difference between different leaf grades, to know exactly what to expect.

Tea Question #3 – I have a tea I don’t like. What should I do?

Every now and then you will try a tea you don’t like. Maybe you don’t like one of the ingredients, maybe it’s too bitter, and maybe it just doesn’t taste right. If you don’t want to throw it away, there are ways to both use it and enjoy it.

What to do?

If the tea is fresh, try to give it a second chance or find an alternative use. You can try to:

experiment with steeping time and leaf-water ratio – you could try using less leaves and more water, or try to steep it for only 30-60 seconds.

add different condiments and try different sweeteners – adding milk or/and sugar will reduce bitterness.

steep it with fresh fruits – find out which fruits are great for steeping with black tea

use it for cooking – intense teas are great for making tea sugar syrups and for adding to cakes and cookies.

add food flavourings such as vanilla, caramel, lemon or orange

cold brew it in the fridge – cold brewing will reduce bitterness and offer a completely different flavour profile.

make a milk tea – stronger black teas, darker oolong tea and some white teas are great for making milk teas

Tea Question #4 – I would like to drink tea, but I’m afraid it has too much caffeine. Which tea shoud I choose?

Unless you are highly sensitive to caffeine or need to avoid it altogether, a cup of tea in the morning is unlikely to give you the same energy boost as coffee. In fact, even a cup of tea in the afternoon is unlikely to keep you awake at night. Tea contains caffeine, and some teas may contain more caffeine than the others, but rarely more than coffee. For example, a shot of espresso is likely to have 60 mg of caffeine, while you can expect 10-50 mg of caffeine in a cup of tea. Some may contain more, but on average, expect 20-30 mg per cup.

What to do?

All real teas contain caffeine, regardless of the type. White tea can have more caffeine than green tea, and green tea may have more caffeine than black tea. You can choose to use less tea leaves, steep them for 1-2 minutes, opt for unbroken longer leaves rather than tea dust or teas with broken leaves, and choose teas made from older mature leaves such as bancha, or teas with stems such as kukicha.

Alternatively, choose tisanes – herbal teas with no caffeine such as chamomile, rooibos or peppermint or decaf teas.

© All That Tea

Tea Question #5 – How to save money on tea?

You tried it; you liked it, and now you want to have it all. It’s very easy to get hooked on tea. And yes, it may become quite an expensive hobby. But a very fun one too.

What to do?

If you want to try as many types as possible, try subscription boxes. They allow you to test different teas for a fraction of a cost of a full-size packaging. Next thing you could do is swapping teas with other tea drinkers. Homemade tea samples make for a great and thoughtful gift. You can also try to experiment with making your own tea blends using some of the most common teas – Assam, Darjeeling, Sencha or Dark roasted oolong. And last, you can plan your tea purchases in advance and buy it when it’s on offer.

Tea Question #6 – I would love to drink tea, but it’s just too complicated to brew. Is there an easier way to do it?

One of the most common tea questions many new tea drinkers have is how to make a good cup of tea fast. The truth is, different teas will require different brewing techniques, but it doesn’t need to be complicated. Brewing tea may sound easy, but some teas are not so forgiving to brewing mistakes. Dan Cong oolong teas are a great exampe – you over brew them and they may turn very bitter. Regular green tea may also become undrinkable if you steep it in boiling water for 5 minutes.

What to do?

Until you are comfortable brewing different types, choose teas that are good for beginners and will not be bitter or too strong, even if you over-brew them. Flavoured blends are often easier to brew than unflavoured pure teas because they may be more forgiving to brewing mistakes.

Investing in a simple to use teapot will also make brewing much easier. Our recommendation? 300 ml side handled teapot with a removable mesh filter. It’s easy to clean, easy to use, and suitable for all tea types. Alternatively, try novelty blends that don’t require any brewing.

All teas usually come with brewing instructions, so pay attention to temperatures and steeping time to get the best flavour.

Final Thoughts on the Most Common Tea Questions

If you are new to tea, the number of types and flavour may seem overwhelming and you will undoubtedly have many tea related questions. But that’s also what’s great about tea. Even if you try a new type every day, it will still keep surprising you. Each type will offer something different and with every cup you drink, you will learn more about tea and your own preferences.

You don’t need to wait for the gingerbread season to enjoy festive flavours. This Oolong Gingerbread Latte recipe will fast forward you straight into the holiday season.

How to make a Gingerbread Latte?

Lattes are all about steamed and frothed milk. You can make them with coffee and tea, or different spices and latte powders. Whichever base you choose, a good latte should always have a layer of frothed milk. That’s exactly what makes it different from other milk-based drinks. While black tea is a common base for making tea lattes, oolong tea can be just as great.

© All That Tea

Which oolong tea should I use?

Oolong tea is the most colourful type of tea. It can be lightly oxidized and closer to green tea, or heavily oxidized and closer to black tea. Some oolong teas have a strong roasted flavour, some have intense honey notes, and some are aged and may have a very complex flavour profile. The best oolong tea for making a Gingerbread latte will have stronger, roasted or honey flavour. Oolong teas with dark, smaller twisted leaves or dark rolled oolongs may all be great for making lattes. Try it with heavily oxidized darker, roasted oolongs, that infuse into a stronger, deeper tea.

What is the best way to brew oolong tea?

Oolong tea is often described as full-bodied, but it’s lighter of regular black teas that are often used for making lattes. There will usually be more lightness in a cup of oolong tea than in a cup of black tea. The flavour is often more complex, with hints of ripe fruits and honey. To get the best flavour, you can boil the tea leaves in a saucepan, rather than steeping them. To make the creamiest latte, this recipe uses 2 combined techniques, for making a chai and for making a latte, including pulling the tea. Don’t skip the pulling part as it will improve the flavour.

What is a gingerbread spice mix?

Gingerbread spice mix is warm and aromatic mix of spices that includes ginger and cinnamon as main ingredients, and a whole range of additional ingredients – cloves, nutmeg, black pepper, allspice, aniseed and star anise. You can make your own blend by mixing. 3 parts of cinnamon, 3 parts of ginger, and 1 part of nutmeg, cloves, allspice each and ½ part of black pepper. There’s no one way to mix spices, and you can adjust ratios to find your perfect flavour. Alternatively, you can buy a pre-made spices. Pre-made spices are widely available and will give an unmistakable gingerbread flavour to your latte. Gingerbread spice mix is similar to pumpkin pie spice, but it’s more flavourful, contains more ginger, and very often black pepper too.

© All That Tea

Oolong Gingerbread Latte Recipe

To make the best Oolong Gingerbread latte, always use flavourful oolong tea, whole milk, and fresh spices. You can replace whole milk with a dairy free alternative with a milk-like flavour and vegan condensed milk alternative.

Seeing a watermelon tea, on the other hand, may leave you either confused or eager to try it. Watermelon oolong tea from Yawn, is unique in every sense.

What is Watermelon Oolong?

Watermelon Oolong is a very unusual, tropical, pretty blend. It’s made with greener semi-ball shaped oolong tea base, blended with papaya pieces and plum and safflower petals. It smells and looks tropical. There are no watermelons in this tea, but we didn’t expect that either. Watermelons are not a type of fruit you would typically eat candied or dried, so the next best thing to add a watermelon flavour to tea is watermelon flavouring.

This tea screams summer. Light watermelon, deep and sweet papaya, and a layer of deep freshness. It’s intense. It’s pretty. And it smells delicious. If you are used to light oolongs, this is not one of them. If you are used to dark flavoured oolongs. This is not one of them either.

© All That Tea

How to brew Watermelon Oolong tea?

Lighter green semi-ball shaped oolongs are always better brewed traditionally. That means using more tea leaves, and re-steeping multiple times. Which is exactly what we did. Traditional brewing using a gaiwan is not really a method you would use for flavoured teas, but there’s something about this tea that says it’s worth a try.

Using re-steeping technique, the same leaves can be used 3-5 times, depending on how much tea you use and how long you steep them for. Start with 30-40 seconds for the first steep. Use at least 3-4 grams of tea per 150 ml of water.

We tried it the western way too, using 2 grams per 200 ml of water and steeped for 3 minutes. This tea won’t get bitter either way, which is a great plus.

Which way was better?

Watermelon oolong may have a strong scent, but the flavour is light regardless of the brewing method. Light in a very good way. Watermelon note is more intense if you steep it the western way. Even when you use more tea leaves and eastern brewing technique, the second, third and fourth infusion will start revealing the oolong base with fresher, greener notes. Surprisingly, there’s a watermelon note even in the fifth infusion. The first infusion with both methods is juicy, smooth and light, with quite strong watermelon aftertaste.

If you love flavoured tropical teas but don’t like the strength and possible astringency of a typical black and green tea tropical blend, this tea is for you. It’s flavourful, light and juicy and would be a great daily summer tea. It would be delicious iced, too. When making an iced tea, use at least 2 teaspoons of tea per cup of water to get a more intense flavour. Since this is an oolong tea, it contains caffeine.
