<p><b>Fresh Watermelon:</b> Summer is a watermelon season. Choose sweet and ripe watermelons and remove all seeds. Watermelon is naturally quite sweet, contains lots of water and goes well with citrusy ingredients. In short, it&#8217;s a perfect ingredient for making summer popsicles.</p>



<p><b>Earl Grey Syrup:</b> Earl Grey syrup is a must have for making desserts with tea, especially icy treats. It&#8217;s far more aromatic than other black teas and goes well with many ingredients. Earl Grey syrup is a simple sugar syrup made with brewed earl grey tea rather than water. Although it&#8217;s possible to buy a pre-made Earl Grey syrup, you can easily make one at home. <p><b>Lime</b>: Lime will balance out the flavour by adding a touch of zestiness. Both Earl Grey syrup and watermelon are quite sweet, so adding some lime will bring out more freshness. You can use lemon instead, but it will give a sourer flavour.</p>

<h2 class="wp-block-heading">Steps for making Earl Grey Watermelon Popsicles</h2>



<p><b>Prepare moulds</b>: Plastic popsicle moulds are super handy for making homemade popsicles. You&#8217;ll need approximately 6-7 moulds. Most popsicle moulds will have a base that will keep them upright, but if you have individual ones, you can use plastic cups to place popsicle moulds inside. Both <a href="https://amzn.to/3KZtYkZ" target="_blank" rel="noreferrer noopener">silicone</a> and plastic moulds will work.</p>



<p><b>Cut the watermelon:</b> Cut watermelon into small pieces and remove all seeds. Place it into a blender and add 7 tablespoons of earl grey syrup. Syrup will add both sweetness and texture. Less syrup will give popsicles an icier, rather than smooth texture. Add lime juice and blend it for 30 seconds. Since the syrup is heavier than watermelon, it will sink to the bottom, creating a two layered look.  </p>



<p><b>Pour into mould and freeze:</b> Pour the watermelon and earl grey syrup into moulds. Don&#8217;t add popsicle sticks just yet. You&#8217;ll need to freeze them for about 30 minutes before inserting them. Once you add sticks, leave it to freeze for a couple of hours.</p>

<h2 class="wp-block-heading">How to store homemade popsicles?</h2>



<p>Once your popsicles are frozen, store them in separate wrappers to keep them fresh and flavourful. Popsicles will keep for at least a month. However, if you leave them in moulds, the flavour may change in less than a week. To remove popsicles from a mould, simply leave them outside the freezer for a couple of minutes and gently remove them.</p>

<h2 class="wp-block-heading">How to make Earl Grey syrup?</h2>



<p>Earl Grey simple syrup is a simple sugar syrup made with brewed earl grey tea and granulated sugar. It will take only 10-15 minutes to make. What&#8217;s great about making this syrup at home is that you can choose your own ingredients and adjust both texture and flavour:</p>

<li>You can replace white sugar with granulated light brown or dark brown sugar to add a nutty caramel note.</li>



<li>And you can adjust the texture by adding more sugar.</li>

<p>In general, you&#8217;ll need to use 1:1 ratio of tea per sugar for a regular simple syrup. However, a sllightly thicker syrup will give a nicer texture to popsicles. Always use more tea leaves, but don&#8217;t over-steep it. You want a flavourful rich cup of tea without bitterness.  </p>

<h2 class="wp-block-heading">Can you replace Earl Grey syrup with some other tea syrup?</h2>



<p>Absolutely. However, choose blends that have a citrusy note. Earl Grey is <a href="https://allthattea.com/tag/black-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with black tea">black tea</a> scented with <a href="https://allthattea.com/tag/bergamot/" class="st_tag internal_tag " rel="tag" title="Posts tagged with bergamot">bergamot</a> (Citrus bergamia), a type or orange originating from Italy. These oranges look similar to lemons and are not typically used as regular oranges. Instead, they are famous for its essential oil. Bergamot oil is derived from the peel, and it&#8217;s been used for scenting Earl Grey tea for 200 years. <a href="https://allthattea.com/tag/earl-grey/">Earl Grey</a> without bergamot would not be an Earl Grey.</p>



<p>Lemon flavoured black tea would be a great alternative to Earl Grey. However, they won&#8217;t taste the same.</p>



<h2 class="wp-block-heading">Can you add more syrup and lemon?</h2>



<p>Yes, but don&#8217;t add less. Use at least 1 tablespoon of syrup per popsicle or more. Simple syrups are very sweet as they are basically only sugar melted in water. We found that 1 lemon is just enough for a good balance.</p>



<h2 class="size-large wp-image-1073 wp-block-heading">How to add popsicle stick to watery popsicles</h2>



<p>Watery popsicles have a different texture than creamy popsicles. Unless you are using popsicle stick that was originally included with your popsicle mould, you won&#8217;t be able to attach a wooden stick immediately. Let them freeze for about 30 minutes before inserting a popsicle stick and freeze for an additional 5-6 hours.</p>



<h2 class="wp-block-heading">How to store Earl Grey lemon popsicles?</h2>



<p>Fully frozen, it&#8217;s best to keep them in their original mould. You can use one zip-lock bag and place for all of them and store for several weeks. They will keep longer, but if you want to enjoy the best possible fresh flavour, use them within a couple of weeks. We bet you won&#8217;t be able to resist them for that long, though.</p>

<p>Popsicles are super easy to make and can be a great replacement for a regular ice cream. Tea popsicles are popsicles made with tea. For making popsicles, you can use almost any tea you want. The best teas are those with stronger flavours, spiced, citrusy and minty blends, fruit teas and rooibos blends. Even if you only have regular unflavoured <a href="https://allthattea.com/tag/black-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with black tea">black tea</a>, you can add vanilla, rum or orange extracts to create a new flavour.</p>



<p>There are two basic types of popsicles – popsicles made with water and popsicles made with a cream base. Popsicles with water are easier to make and will have an icy and mushy texture. Cream-based popsicles are creamier, but they may have an icy texture too. Thankfully, there are several ways to avoid that.</p>



<p>The most common base for creamy homemade popsicle is a plain thick yogurt.</p>



<h2 class="wp-block-heading"><strong>Can You Make Creamy Popsicles with Tea Syrup and Yogurt Only?</strong></h2>



<p>Yes, you can make a very simple popsicle by mixing honey or simple syrup with yogurt. We tested multiple techniques, and pure yogurt and syrup popsicles are simply not indulgent enough. They will freeze well, but they will also be more icy and less creamy. If you are in a rush and want to make popsicles in literally a minute, you can use this technique. Otherwise, we do advise to add one more ingredient &#8211; whipped cream.</p>



<h2 class="wp-block-heading"><strong>Should Popsicles be Creamy?</strong></h2>



<p>Popsicles or ice lollies don&#8217;t need to be as creamy as ice cream They can be made from fruit syrups and water, fruit purees or fruit powders and milk. You may prefer one type, or you may enjoy them all. This recipe is for creamier tea popsicles, but not as creamy as a real ice cream would be. They will still contain much less ice crystals than you would normally have if you simply froze yogurt.</p>



<h2 class="wp-block-heading"><strong>Can You Make Popsicles Without Dairy Milk?</strong></h2>



<p>Yes, you can use plant-based yogurts too. Choose those with a thicker texture and higher fat content.</p>
