Ingredients
1cup of ice(about 6 large ice cubes)
50ml of whole milk
1tablespoonof heavy whipping cream
30-50grams of boba pearls (about a handful)
1-2tablespoons of honey
1cup of water (around 200 ml)
2heaped teaspoonsof strawberry flavoured black tea OR 2 heaped teaspoons of strong black tea and a handful of fresh strawberries
A few sliced fresh strawberries for garnish
1litreof water for cooking tapioca pearls
Instructions
Bring fresh water to a boil.
If you are using fresh strawberries, wash and slice them and add them into a cup together with 2 teaspoons of tea leaves (strawberry flavoured or unflavoured).
Steep the tea (and if using, fresh strawberries) for ten minutes. Alternatively, to make an even richer tea, boil tea leaves and strawberries in a saucepan for 10 minutes.
In the meantime, boil tapioca pearls following the instructions on the packaging. They only need a couple of minutes to boil and a couple of minutes of simmering. Have a bowl of cold water ready to wash them immediately once they are done. Coat them in a spoon of honey or simple syrup.
Fill a large 300-350ml glass with ice.
Once the tea is ready, if you are using honey as a sweetener, add more honey. If you are using a simple syrup or a sweetener that’s easily dissolvable in cold water, you can add it later.
Pour the tea over ice.
In a small cup, mix milk and whipping cream and use a frother to froth it for a few seconds. You don’t want a thick cream, only to blend both milk and cream together.
Add frothed milk and cream to tea.
Add tapioca pearls.
Serve immediately with a large straw or a long teaspoon.
