<h2 class="wp-block-heading">Ingredients for making Earl Grey Popsicles Watermelon </h2>



<p><b>Fresh Watermelon:</b> Summer is a watermelon season. Choose sweet and ripe watermelons and remove all seeds. Watermelon is naturally quite sweet, contains lots of water and goes well with citrusy ingredients. In short, it&#8217;s a perfect ingredient for making summer popsicles.</p>



<p><b>Earl Grey Syrup:</b> Earl Grey syrup is a must have for making desserts with tea, especially icy treats. It&#8217;s far more aromatic than other black teas and goes well with many ingredients. Earl Grey syrup is a simple sugar syrup made with brewed earl grey tea rather than water. Although it&#8217;s possible to buy a pre-made Earl Grey syrup, you can easily make one at home. <p><b>Lime</b>: Lime will balance out the flavour by adding a touch of zestiness. Both Earl Grey syrup and watermelon are quite sweet, so adding some lime will bring out more freshness. You can use lemon instead, but it will give a sourer flavour.</p>

<h2 class="wp-block-heading">Steps for making Earl Grey Watermelon Popsicles</h2>



<p><b>Prepare moulds</b>: Plastic popsicle moulds are super handy for making homemade popsicles. You&#8217;ll need approximately 6-7 moulds. Most popsicle moulds will have a base that will keep them upright, but if you have individual ones, you can use plastic cups to place popsicle moulds inside. Both <a href="https://amzn.to/3KZtYkZ" target="_blank" rel="noreferrer noopener">silicone</a> and plastic moulds will work.</p>



<p><b>Cut the watermelon:</b> Cut watermelon into small pieces and remove all seeds. Place it into a blender and add 7 tablespoons of earl grey syrup. Syrup will add both sweetness and texture. Less syrup will give popsicles an icier, rather than smooth texture. Add lime juice and blend it for 30 seconds. Since the syrup is heavier than watermelon, it will sink to the bottom, creating a two layered look.  </p>



<p><b>Pour into mould and freeze:</b> Pour the watermelon and earl grey syrup into moulds. Don&#8217;t add popsicle sticks just yet. You&#8217;ll need to freeze them for about 30 minutes before inserting them. Once you add sticks, leave it to freeze for a couple of hours.</p>

<h2 class="wp-block-heading">How to store homemade popsicles?</h2>



<p>Once your popsicles are frozen, store them in separate wrappers to keep them fresh and flavourful. Popsicles will keep for at least a month. However, if you leave them in moulds, the flavour may change in less than a week. To remove popsicles from a mould, simply leave them outside the freezer for a couple of minutes and gently remove them.</p>

<h2 class="wp-block-heading">How to make Earl Grey syrup?</h2>



<p>Earl Grey simple syrup is a simple sugar syrup made with brewed earl grey tea and granulated sugar. It will take only 10-15 minutes to make. What&#8217;s great about making this syrup at home is that you can choose your own ingredients and adjust both texture and flavour:</p>

<li>You can choose any type of tea, making sure the simple syrup will be super flavourful.</li>



<li>You can replace white sugar with granulated light brown or dark brown sugar to add a nutty caramel note.</li>



<li>And you can adjust the texture by adding more sugar.</li>

<p>In general, you&#8217;ll need to use 1:1 ratio of tea per sugar for a regular simple syrup. However, a sllightly thicker syrup will give a nicer texture to popsicles. Always use more tea leaves, but don&#8217;t over-steep it. You want a flavourful rich cup of tea without bitterness.  </p>

<h2>What is Watermelon Oolong?</h2>
<p>Watermelon Oolong is a very unusual, tropical, pretty blend. It&#8217;s made with greener semi-ball shaped <a href="https://allthattea.com/tag/oolong-tea/">oolong tea</a> base, blended with papaya pieces and plum and safflower petals. It smells and looks tropical. There are no watermelons in this tea, but we didn&#8217;t expect that either. Watermelons are not a type of fruit you would typically eat candied or dried, so the next best thing to add a watermelon flavour to tea is watermelon flavouring.</p>
<p>This tea screams <a href="https://allthattea.com/tag/summer-tea/">summer</a>. Light watermelon, deep and sweet papaya, and a layer of deep freshness. It&#8217;s intense. It&#8217;s pretty. And it smells delicious. If you are used to light oolongs, this is not one of them. If you are used to dark flavoured oolongs. This is not one of them either.</p>

<h2>How to brew Watermelon Oolong tea?</h2>
<p>Lighter green semi-ball shaped oolongs are always better brewed traditionally. That means using more tea leaves, and re-steeping multiple times. Which is exactly what we did. Traditional brewing using a gaiwan is not really a method you would use for flavoured teas, but there&#8217;s something about this tea that says it&#8217;s worth a try.</p>
<p>Using re-steeping technique, the same leaves can be used 3-5 times, depending on how much tea you use and how long you steep them for. Start with 30-40 seconds for the first steep. Use at least 3-4 grams of tea per 150 ml of water.</p>
<p>We tried it the western way too, using 2 grams per 200 ml of water and steeped for 3 minutes. This tea won&#8217;t get bitter either way, which is a great plus.</p>
<h2>Which way was better?</h2>
<p>Watermelon oolong may have a strong scent, but the flavour is light regardless of the brewing method. Light in a very good way. Watermelon note is more intense if you steep it the western way. Even when you use more tea leaves and eastern brewing technique, the second, third and fourth infusion will start revealing the oolong base with fresher, greener notes. Surprisingly, there&#8217;s a watermelon note even in the fifth infusion. The first infusion with both methods is juicy, smooth and light, with quite strong watermelon aftertaste.</p>
<p>If you love flavoured tropical teas but don&#8217;t like the strength and possible astringency of a typical black and green tea tropical blend, this tea is for you. It&#8217;s flavourful, light and juicy and would be a great daily <a href="https://allthattea.com/tag/summer-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with summer tea">summer tea</a>. It would be delicious <a href="https://allthattea.com/tag/iced/" class="st_tag internal_tag " rel="tag" title="Posts tagged with iced">iced</a>, too. When making an <a href="https://allthattea.com/tag/iced-tea/" class="st_tag internal_tag " rel="tag" title="Posts tagged with iced tea">iced tea</a>, use at least 2 teaspoons of tea per cup of water to get a more intense flavour. Since this is an oolong tea, it contains caffeine.</p>
